Specify dissolved and suspended ingredients, fat behavior, target concentration and intended customer dilution. Accepted consistency and flavor distribution must survive hold, transfer and filling.
Viscosity can change as solids hydrate and temperature changes. Define heat transfer, mixing, discharge and package duty across the process, including worst-case end-of-batch handling.
Different ingredient, emulsion, allergen and qualified preservation requirements may apply. Group only compatible families rather than assuming every “concentrate” shares one line.
Distinguish evaporation / reduction from blending concentrated purchased ingredients.
Measure complete batch, quality and discharge duty across representative concentrates.
Map high-solids / fat / particulate soils, customer identities and qualified transitions.
Review each system by its operating duty and the interfaces to be agreed before procurement.
Agreed batch cooking / mixing duty.
Product-approved staging / holding / blend duty.
Defined concentrate-soil and customer transition circuits.
Specialist concentration / shear / preservation / filling.

Compare proposals against accepted concentrate and customer-use requirements. State whether raw feed is already concentrated, what specialist reduction / treatment is included, and whether the quote covers discharge, bulk containers and qualified cleaning. Final customer dilution volume is not the same as the concentrate manufacturer’s saleable kg.

| Blend or reduce / evaporate? | Actual input composition and desired concentrate. | Assign the complete process boundary. |

Start with the business outcome
A foodservice-base producer must meet customer performance after reconstitution or further cooking, not only make a concentrated batch. DPS can assess agreed cooker / vessel, utility, controls, transfer, cleaning and installation interfaces. Equipment suitability and the ROI case depend on the actual product, accepted concentration / texture, package, customer qualification and commercial demand.
Confirm the exact foodservice base & concentrate product, preservation route and project suitability with DPS before assigning a delivery scope. Confirm formulation, reduction / evaporation, specialist heat / shear, preservation, package and customer-use requirements with qualified teams. This guide is a product-specific assessment, not a claim of proprietary DPS concentration technology or a guarantee of a customer’s final application result.
Agree ingredient distribution, concentration, viscosity, particles and the intended dilution or reconstitution performance for each product family.
Check heat transfer, hydration, cooling where required, end-of-batch discharge and transfer using demanding representative recipes.
Confirm accepted concentrate and customer-use results, product identity, qualified cleaning and good bulk-packaged output after customer changes.

Review the scope, cost assumptions and operating case for your project. The examples and calculators below support early planning and are not DPS quotations.
Define raw and customer-use boundaries first, then measure complete cycles, quality, utilities, residual product and package constraints.
Confirm product / customer specification, concentration route, package, preservation, ingredient handling, utilities, waste and demand.

| Decision | Targeted Work | Broader Scope |
|---|---|---|
| Concentration Duty | Correct measured heating, mixing or discharge limitations. | Include additional specialist concentration and utility scope where required. |
| Customer Performance | Trial the complete process and intended reconstitution. | Reconfigure the process when retained equipment cannot meet accepted product use. |
| Product Families | Coordinate compatible recipes, routing and cleaning. | Add separate capability for materially different ingredient or preservation duties. |
Compare proposals with the same product duty, supplier boundaries and acceptance basis. The amount below is a transparent planning example, not a market price range, supplier estimate or DPS quotation.
| Cost bucket | Assumed amount |
|---|---|
| Product / process and interface engineering | $48,000 |
| Defined configured / OEM component allowance | $168,000 |
| Mechanical / electrical field installation | $92,000 |
| Instrumentation and control integration | $48,000 |
| Commissioning and acceptance support | $28,000 |
| Training, documentation and closeout | $16,000 |
| Defined project scope | $400,000 |
| Separate site / facility additions | $65,000 |
| Capital contingency (15%) | $69,750 |
| Separate one-time startup / shutdown cost | $40,000 |
| Incremental working capital | $30,000 |
| Total initial cash | $604,750 |
The defined scope assumes applicable freight, procurement charges and taxes are included in the owner’s estimate. Add missing civil, land / shell, OEM, environmental, validation and permitting costs explicitly. Site and field conditions, duty, production access and quoted supplier scope determine actual price. Financing is excluded.
Hypothetical owner-budget case: 250 days × 0.5 useful recovered hour/day × 900 good kg/h × 55% realization gives 61,875 incremental sold kg/year after the 90,000 kg demand ceiling. Net price $5.6/kg less incremental variable cost $3.8/kg gives $1.8/kg contribution. The baseline inputs assume $20,000 energy, $14,000 water / chemistry and $8,000 maintenance reductions per year. Avoided payroll is 0 hours × $40 × 0% cash realization. Verified baseline purchase reduction contributes $0; its basis is unchanged accepted baseline output. Deduct $18,000 added annual fixed cost. Result: $135,375 steady net benefit; initial cash $604,750 includes the separate site, contingency, startup and working-capital inputs. These are original illustrative assumptions, not a quotation, price benchmark or achieved DPS result.
Calculated from these assumptions: steady annual net benefit $135,375; year-one net cash $74,025; cash payback 4.92 years; five-year NPV at 10% is −$147,345. Change the assumptions below to test a different case.
Replace the illustrative inputs with your own measured or quoted values. The five-year pre-tax model uses good kilograms, demand-capped contribution and separately verified baseline savings; it is not a project quotation.
All defaults are illustrative. The default case is an operating-plant improvement, not a greenfield quote. For a new operation, set baseline savings to zero and enter every additional operating and capital cost.

Modeled incremental sales: 61,875 kg/year at $1.80/kg contribution. The base case does not recover the required discounted return within five years. Year-one net cash: $74,025.
Realization needed for the target operating payback
53.8%
Minimum capacity realization for a 5-year operating cash payback; terminal recovery excluded. Demand and unit margin must also hold.

| Downside | $90,825 | −$406,975 | Beyond 5 years |
| Base | $135,375 | −$147,345 | 4.92 years |
| Upside | $164,889 | −$46,195 | 4.11 years |
Downside: installed and site costs +20%, realization ×0.75 and unit contribution reduced by 20% of its absolute value. Upside: realization ×1.15, capped at 100%, and unit contribution improved by 10% of its absolute value. The demand ceiling still applies.
The default reproduces the main retrofit energy input of $20,000/year before added maintenance. The narrow worksheet is not a product-process calculation and does not automatically transfer values into the ROI model. Additional annual service is included in the main added-fixed-cost allowance; deduct it once.
