Boneless Portions
Define size, product temperature, recipe, handling and accepted post-process quality. Measure marinade addition, retained / drained material and saleable packaged output rather than gross tumbler discharge.
Evaluate brine preparation, tumbling, product handling, cold services and packaging as one qualified poultry production system.

Define size, product temperature, recipe, handling and accepted post-process quality. Measure marinade addition, retained / drained material and saleable packaged output rather than gross tumbler discharge.
Mechanical action, coverage, skin condition, piece distribution and packaging differ from boneless pieces. Trial the demanding product with the selected specialist package.
Coating, thermal processing, cooling / freezing, raw / cooked flows and package release introduce separate qualified OEM requirements. A raw marination project does not establish the whole route.
Map preparation, cooling, addition / injection interfaces, tumbling, drainage and packaging.
Locate waits and manual work across the operating poultry product mix.
Survey sanitation, returns, cold duty and multi-OEM control states before modifying the running plant.
Review each system by its operating duty and the interfaces to be agreed before procurement.
Product-specific tumbling / seasoning duty.
Brine / marinade preparation where agreed.
Cold and sanitation service distribution.
Injection, handling, cooking and packaging OEMs.

Ask whether each proposal has been defined for the actual portion / bone / skin envelope and the qualified recipe. Include brine preparation and cooling, drainage, transfer, packaging and sanitation. Compare accepted good product and cash costs after trials, not a supplier’s isolated cycle time or gross discharge mass.

| Buying question | Evidence to prepare | Engineering decision |
|---|---|---|
| Will one tumbler suit all portions? | Qualified tests with actual bone / skin and piece sizes. | Define operating envelope and accepted quality. |
| What is the actual material benefit? | Ingredient input, retained product, drip and final good output. | Avoid gross-uptake or selling-price shortcuts. |
| Where can paid cost decrease? | Approved paid-hour / overtime changes. | Separate cash saving from productive redeployment. |
Start with the business outcome
A poultry upgrade may be driven by uneven seasoning, excess handling, unstable cold conditions or packaging waits rather than tumbler capacity alone. DPS can support scoped process / utility / controls and installation interfaces around the selected marination and specialist poultry packages. The financial case must use accepted products, measured ingredient / drip balance and commercial demand while product specialists define the qualified recipe and release.
Primary bird processing, deboning, injection, cooking / freezing, inspection and filling / sealing specialist systems are assigned explicitly. No generic marinade uptake, microbial result or DPS manufacture of every poultry machine is claimed. Validate skin-on / bone-in / boneless duties separately.
Agree portion size, bone or skin condition, temperature, recipe and accepted post-process quality separately for the products in scope.
Verify addition, coverage, mechanical action, drip or retained material and piece condition through the selected specialist equipment.
Check delivered cold services, qualified sanitation, package states and saleable output, with separate specialist scope for cooked or further-processed routes.

Review the scope, cost assumptions and operating case for your project. The examples and calculators below support early planning and are not DPS quotations.
Measure the actual brine / product / drip balance, paid handling, utility conditions and packaging schedule. Trial representative portion types before selecting package or recipe changes.
Define product families, specialist package route, cold / raw-cooked flow, hygiene, package and staff requirements together with demand.

| Marination inconsistency | Recipe, dose, portion, drip and quality evidence. | Trial brine / tumbler / specialist interface changes. | Actual accepted input / product economics. |
| Manual product handling | Observed work and paid overtime / agency costs. | Compare flow and handling correction. | Real paid-cost avoidance, excluding extra-volume labor. |
| Cold / package wait | Matched product / utility and package states. | Coordinate shared services and OEM readiness. | Useful sold good product after demand limits. |

| Decision | Targeted Work | Broader Scope |
|---|---|---|
| Marination | Trial brine, dosing and retained tumbler duty with the actual portions. | Change specialist equipment where coverage or product integrity cannot be met. |
| Handling and Packaging | Correct measured manual, cold or package-state constraints. | Integrate additional handling or package capacity with accepted product quality. |
| Further Processing | Keep the raw-marination scope explicit. | Include coating, thermal or frozen duties and qualified raw or cooked flows. |
Compare proposals with the same product duty, supplier boundaries and acceptance basis. The amount below is a transparent planning example, not a market price range, supplier estimate or DPS quotation.
| Cost bucket | Assumed amount |
|---|---|
| Product / process and interface engineering | $45,000 |
| Defined configured / OEM component allowance | $158,000 |
| Mechanical / electrical field installation | $86,000 |
| Instrumentation and control integration | $45,000 |
| Commissioning and acceptance support | $26,000 |
| Training, documentation and closeout | $15,000 |
| Defined project scope | $375,000 |
| Separate site / facility additions | $60,000 |
| Capital contingency (15%) | $65,250 |
| Separate one-time startup / shutdown cost | $40,000 |
| Incremental working capital | $30,000 |
| Total initial cash | $570,250 |
The defined scope assumes applicable freight, procurement charges and taxes are included in the owner’s estimate. Add missing civil, land / shell, OEM, environmental, validation and permitting costs explicitly. Site and field conditions, duty, production access and quoted supplier scope determine actual price. Financing is excluded.
Hypothetical owner-budget case: 250 days × 0.4 useful recovered hour/day × 1,600 good kg/h × 60% realization gives 96,000 incremental sold kg/year after the 120,000 kg demand ceiling. Net price $6.2/kg less incremental variable cost $4.85/kg gives $1.35/kg contribution. The baseline inputs assume $16,000 energy, $14,000 water / chemistry and $9,000 maintenance reductions per year. Avoided payroll is 700 hours × $40 × 50% cash realization. Verified baseline purchase reduction contributes $0; its basis is unchanged accepted baseline output. Deduct $18,000 added annual fixed cost. Result: $164,600 steady net benefit; initial cash $570,250 includes the separate site, contingency, startup and working-capital inputs. These are original illustrative assumptions, not a quotation, price benchmark or achieved DPS result.
Calculated from these assumptions: steady annual net benefit $164,600; year-one net cash $100,690; cash payback 3.85 years; five-year NPV at 10% is −$4,386. Change the assumptions below to test a different case.
Replace the illustrative inputs with your own measured or quoted values. The five-year pre-tax model uses good kilograms, demand-capped contribution and separately verified baseline savings; it is not a project quotation.
All defaults are illustrative. The default case is an operating-plant improvement, not a greenfield quote. For a new operation, set baseline savings to zero and enter every additional operating and capital cost.

Modeled incremental sales: 96,000 kg/year at $1.35/kg contribution. The base case does not recover the required discounted return within five years. Year-one net cash: $100,690.
Realization needed for the target operating payback
41.2%
Minimum capacity realization for a 5-year operating cash payback; terminal recovery excluded. Demand and unit margin must also hold.

Downside: installed and site costs +20%, realization ×0.75 and unit contribution reduced by 20% of its absolute value. Upside: realization ×1.15, capped at 100%, and unit contribution improved by 10% of its absolute value. The demand ceiling still applies.
The default reproduces the main retrofit energy input of $16,000/year before added maintenance. The narrow worksheet is not a product-process calculation and does not automatically transfer values into the ROI model. Additional annual service is included in the main added-fixed-cost allowance; deduct it once.
